Spanakopita

My great grandma used to make this when I was a little girl.


one pound of already prepared spinach, chopped
(the spinach@Costco works great)
(I use a pizza slicer in a bowl to chop the spinach)

about 21 or so green onions sliced and sautéd in olive oil

add green onions, 7 beaten eggs  and one pound  
 of crumbled feta cheese to spinach~mix
with a spatula and set aside. (a little salt and pepper to your taste)

use filo pastry sheets (find them at Ralph's in the freezer section).
Let box set out on counter for about two hours to thaw.
unroll pastry sheets onto your work area.  melt one cup
 butter (2 cubes) then add 3/4 cup extra virgin olive oil.
Using a pastry brush paint the bottom of a 9"x13" pan
with butter/olive oil mixture and place about seven pastry sheets
into pan, brushing each with the butter~oil mixture. Spread spinach 
mixture, and cover with seven or so individually brushed pastry sheets.


Score top sheets with a razor blade, (it should look like this).
Bake @350* oven for about one hour, 
(it should look nicely browned).  Let spanakopita
cool for about 15 or so minutes~then using a sharp knife
cut through the score marks into pieces.
serve for  lunch with a salad!

I used a slightly larger pan and put a few more pastry sheets on
the bottom and the top.
My great grandma used to make this as an appetizer
to serve before dinner with wine.
